Classic Michelada
A michelada is a cold lager wearing lime, salt, and heat. On the lot you batch it in a pitcher so you are not building one glass at a time while the grill flares.
Yield: about 8 drinks (one pitcher). Scale the base; keep beer cold and add per round if the crew stretches.
Ingredients
- Kosher salt (or Tajín-style chile-lime salt) for rims
- 1 cup fresh lime juice (about 8–10 limes)
- 2 cups tomato juice or Clamato
- 2 tsp hot sauce (whatever your cooler already loves)
- 2 tsp Worcestershire sauce
- 1/2 tsp soy sauce or Maggi (optional, for savor)
- Pinch of black pepper
- Pinch of celery salt or extra chile-lime salt (optional)
- 4–6 (12-oz) cold light lagers or Mexican-style lagers
- Ice
- Lime wheels for the pitcher
Zero-proof lane: same base over ice with cold sparkling water or ginger beer instead of lager — label the pitcher.
Method
- Rim glasses ahead: lime wedge on the lip, dip in salt, set in the shade.
- In a pitcher, whisk lime juice, tomato juice or Clamato, hot sauce, Worcestershire, soy or Maggi if using, pepper, and optional celery salt. Taste — it should be sharp and savory before beer. Chill the base hard.
- At pour time: ice in the pitcher, pour in cold lager, gentle stir, lime wheels. Do not drown it early if the crew is slow — keep base cold and beer in the drinks cooler, combine in waves.
- Pour into rimmed glasses. Refill base as needed; keep everything iced.
Lot notes
- Drinks cooler for beer and spare ice; pitcher lives in shade. See Ice Math for Twenty if the bag count is guesswork.
- Sun and salt dehydrate — water next to the michelada tray is hospitality, not a lecture.
- Heat level is a dial: put the hot sauce on the side for the second pitcher if half the crew flinches.
- Homegate: same pitcher on game day; still chill the base before the beer hits.
