Cooler Potato Salad
Potato salad is not a flex. It is cooler cargo. Make it the night before, chill it flat, and keep it out of the danger zone on the lot.
Yield: about 8–10 as a side (scale the mayo and mustard if your bowl is bigger).
Ingredients
- 3 lb waxy potatoes (Yukon Gold or red), scrubbed
- Kosher salt
- 1 cup mayonnaise (real mayo — salad dressing gets weepy in a cooler)
- 2 Tbsp yellow or Dijon mustard
- 2 Tbsp apple cider vinegar or pickle brine
- 1/2 tsp black pepper
- 3 celery stalks, fine dice
- 1/2 small red onion, fine dice (soak in cold water 10 minutes if you want less bite)
- 4 hard-boiled eggs, chopped (optional)
- 2 Tbsp chopped dill pickles or relish (optional)
- Paprika or sliced green onion for the top (optional)
Method
- Cut potatoes into bite-size chunks (skins on is fine). Cover with cold water, salt the pot like pasta water, and boil until just tender — about 10–12 minutes. Drain.
- While still warm, toss with the vinegar or brine. That soaks flavor in before the mayo locks the surface. Cool to room temp, then fridge until cold.
- Fold in mayo, mustard, pepper, celery, onion, and any eggs or pickles. Taste salt. Cover and chill at least 4 hours — overnight is the captain move.
- Pack in a tight container nested in the food cooler on ice. Serve cold from the bowl; scoop what you need, lid the rest.
Lot notes
- Chill before the cooler. Warm salad melts ice and sits in the danger zone on purpose. Overnight fridge is the play.
- Food cooler, not drinks cooler. Fewer lid opens. Raw meat stays in its own sealed zone — see Food Safety on the Lot.
- Time rule: Perishable sides out of the cooler about 2 hours max (1 hour if the air is above ~90°F). Shade the bowl; don’t park mayo next to the grill.
- Vinegar-style lane: Skip mayo, lean mustard + oil + more vinegar for heat days when you want less dairy risk. Same pack discipline.
- Homegate: Same bowl. Still chill hard — Sunday countertop is not a cooler.
