Foil-Pack Veggies
Foil-pack vegetables are how the side dish stops competing with the protein for grate space. Build at home or on the hood, park on medium heat, pull when soft.
Yield: 4 packs (about 8 as a side — one pack per 2 people).
Ingredients
- Heavy-duty aluminum foil (don’t cheap out — thin foil tears and leaks)
- 2 lb mixed heat-tolerant vegetables, cut bite-size — choose from:
- Bell peppers · onion · zucchini · yellow squash
- Broccoli florets · cauliflower
- Baby potatoes or Yukon chunks (parboil 8–10 min at home if you want them done with the rest)
- Corn kernels or small chunks of cob
- 3–4 Tbsp olive oil or neutral oil
- Kosher salt and black pepper
- 2–3 garlic cloves, minced (or 1 tsp garlic powder)
- Optional: 1 tsp dried Italian seasoning or smoked paprika · red pepper flakes · squeeze of lemon after cooking · handful of shredded cheese in the last 2 minutes
Method
- Toss veg with oil, salt, pepper, garlic, and any dry seasoning so everything is coated.
- Tear four large foil sheets. Pile veg in the center; fold into tight flat packs (double-wrap if your foil is thin). Leave a little headroom for steam.
- Grill over medium heat 15–25 minutes, flipping once, until potatoes/onion are tender and peppers blister. Timing rides on cut size and how hot your “medium” really is — poke through foil carefully with a fork if unsure.
- Open away from faces — steam bites. Lemon or cheese if you want it. Serve from the foil or dump into a bowl.
Lot notes
- Build at home in a zip bag; assemble packs on the lot to save cooler space, or pre-wrap and keep the packs upright in a tote.
- Potatoes need a head start (parboil) or they’ll lag behind zucchini.

- Raw meat juices never share a pack with the vegetables.
- Homegate: sheet pan at 425°F ~20–25 minutes if you skip the grill.
