Italian Sausage and Peppers
Italian sausage and peppers is built for a standing crowd: snappy links, sweet peppers, onions that catch the drippings, rolls that finish the job.
Yield: 6 sausages (about 6 sandwiches).
Ingredients
- Oil for the grill grates
- 6 Italian sausages (mild, hot, or a mix)
- 2 Tbsp olive oil
- 2 large bell peppers, mixed colors, seeded and sliced into strips
- 1 large onion, sliced into half-moons
- 3 garlic cloves, smashed
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- Salt and black pepper
- Splash of beer or water to loosen the pan (optional)
- 6 crusty rolls or sturdy sub rolls
- Mustard or jarred giardiniera (optional)
Method
- Heat the grill to medium-high; oil the grates. Grill the sausages, turning often, until browned and close to done — about 10–12 minutes. Move to a clean plate.
- Set a cast-iron skillet or grill-safe pan on the grate (or side burner). Add olive oil, peppers, onion, and garlic. Cook until soft and blistered at the edges — about 10 minutes. Season with oregano, red pepper flakes, salt, and pepper. Splash of beer or water if the pan is dry.
- Nestle the sausages into the peppers (whole or sliced on a bias). Lid down or cover the pan 5–8 minutes until sausages hit a safe finish and the veg is glossy.
- Split rolls, load sausage + peppers + onions. Mustard or giardiniera if the crew wants bite.
Lot notes
- Done when fresh pork sausage hits typically 160°F — thermometer beats color. Keep raw and cooked paths separate; see Food Safety on the Lot.
- No skillet? Foil-pack peppers, onion, garlic, oil, and salt; grill until soft. Brown sausages on the grate and build the sandwiches. Still honest.
