Jerk Chicken Drumsticks
Drumsticks feed a crowd without babysitting a dozen burgers. Coat them in a bright jerk-style paste, sear for color, then finish off direct heat until they are done.
Yield: about 10–12 drumsticks (a solid platter for 5–6 hungry people).
Ingredients
- Oil for the grill grates
- 10–12 chicken drumsticks
- 1 bunch scallions, rough chop (white and green)
- 2–4 hot chiles (Scotch bonnet or habanero), seeded if you want less burn — gloves help
- 4 garlic cloves
- 1-inch piece fresh ginger, peeled and sliced
- 2 Tbsp fresh thyme leaves (or 2 tsp dried)
- 1 Tbsp ground allspice
- 1 tsp ground cinnamon
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 Tbsp brown sugar
- 3 Tbsp neutral oil
- 2 Tbsp lime juice or apple cider vinegar
- Lime wedges for the platter (optional)
Method
- Paste at home. Blitz scallions, chiles, garlic, ginger, thyme, allspice, cinnamon, salt, pepper, brown sugar, oil, and lime juice or vinegar into a thick paste. Taste — it should be bright and hot, not watery.
- Pat drumsticks dry. Coat well with paste. Bag or covered bowl in the fridge at least 4 hours, overnight better. Keep raw chicken on the bottom shelf; wash hands and boards.
- Pack sealed and nested on ice in the food cooler. At the lot: two-zone grill — one side medium-high, one side quieter. Oil the grates.
- Sear drumsticks over the hot zone 6–8 minutes, turning for color without torching the sugar. Move to indirect heat, lid down, and cook until the thickest piece hits 165°F — usually 20–30 minutes more depending on fire and bone size. Rest a few minutes. Lime on the platter if you brought it.
Lot notes
- Paste and chill at home. Lot blenders are a myth; warm raw chicken in a trunk is a bad story. See Food Safety on the Lot.
- Mild tray: Hold a few drumsticks in a softer paste (one chile, more scallion and lime) so guests who skip heat still eat. Label the platter.
- Never reuse leftover raw paste on cooked meat. Fresh squeeze of lime on the finished tray is fine.
