Regional Table
National checklists flatten flavor. Regional Table is the ritual of cooking like the place that raised you — or the place you are visiting — without turning people into mascots.
Big-pot cookouts, brat pans, grove hospitality, lake-effect chili — the table tells you where you are before the scoreboard does.
How we do it
- Name the dish and the weather. Gumbo on a humid game day reads different than chili in a lake-effect wind. Say both out loud on the invite so people dress and pack for the food, not only the kickoff.
- Borrow with credit. If you are an away fan cooking local, say so. “Tried the local crawfish boil — teach me if I missed a step” beats costume-shop authenticity. Curiosity travels; mockery does not.
- Keep a flexible core. One regional hero + two crowd-pleasers beats a theme-park menu nobody finishes. Rookies and kids still need a path to a full plate.
- Protect the hero dish. Assign who owns the pot, the roux, the smoker, or the brat pot. Regional pride dies when six people “help” without a captain.
Food traditions, not costumes
Regional Table is affection, not a checklist of stereotypes:
- Cook what the crew actually grew up eating — or what the town around the stadium is famous for — and give credit.
- Bring the side that extends that table (rice, bread, pickles, sauce) instead of a random grocery grab that fights the hero.
- Match heat and hold times to asphalt reality. A proud dish that turns to mush in the sun is not hospitality.
