Grilling 101
Lot grill basics — fire, timing, wind, and a thermometer habit. Cook side of the party, not a full Gear chapter.
Fire before fancy
Get a steady heat zone before the crew is hungry. Light earlier than you think — asphalt wind and cold metal steal minutes.
Timing on the lot
- Seared protein needs a calm window — don’t start the main when kickoff traffic hits your row.
- Hold sides warm or cold on purpose; lukewarm is where trouble starts (see Food safety).
- One main done well beats three half-finished trays.
Wind and weather
Wind flips lids, cools grates, and pushes smoke into the canopy. Face the grill so exhaust isn’t eating your shade. Rain lids and a simple weather play keep the cook competent.
Thermometer habit
Color lies. Temp doesn’t. Poultry to a safe finish; rest meat before you slice for the table.
